After spilling small cereal pieces all over the aisle in our produce and grocery stores several time I started looking at more practical snacks.  I love making quick and easy snacks for my munchkin.  An even better snack idea is one that is perfect "at home" AND perfect to "take with you".

Best-Ever Chewy Chocolate Chip Cookies

Chocolate chip cookies have always been something that Chad and I disagree on.  I make a ton of cookies around the holidays and I devour the chocolate chip cookies.  I like them flat, crispy and chewy in the center.  Chad doesn't eat them.  He tells me he doesn't like chocolate chip cookies.  He likes puffy, chewy cookies.  I have finally found the perfect cookie to turn him into a chocolate chip cookie lover.

Spiced Honey Nut Breakfast Granola

Store bought snacks are just not cutting it these days.  We are really enjoying healthy homemade snacks and breakfasts.  My munchkin loves this granola for breakfast and I love feeding it to her.  A real wholesome breakfast 'cereal'.

Loaded with fruit, nuts, cinnamon and honey; most times I can hardly get the granola packed up and into a mason jar before its gone.  We all love this as a sweet treat too.  Perfect to top yogurt, ice cream or eat alone.  We can't get enough and I am sure you will love it too!

This time of year I am reminded of Autumn in New York when I was a kid.  My great-grandparents had beautiful apple trees and my great-grandma would bake the most amazing oatmeal cookies while my brother and I were outside climbing the apple trees picking the fruit.  Such warm and wonderful memories.

Mini Chicken Pot Pies

Chicken pots pies are such the comfort food for me.  Truth be told when I first moved out on my own I would buy the 'budget friendly' pot pies in the freezer section.  They were about 25¢ each back then.  I never dreamed that I would be making my own pot pies.

Well, here we are and I tell you these are every bit as comforting as what I remember from my childhood.  Made with whole ingredients that I can feel good about feeling my family. This recipe is so easy I am confident it is perfect for every cook from the novice to the experienced!  With step by step photos, you have to check this one out!!!

Read the recipe and find out my time saving shortcut and the SECRET ingredient that makes the filling so fabulous!  Click here.

Grilled Breaded Chicken Sandwich is a healthy version of the old fried chicken classic w/a fab marinade that makes it amazing! or BAKE IT!!!  It is scrumptious either way.  This is our favorite chicken sandwich.  Why go out to get one when you can make this at home?

Lime in the Coconut Chewy Sugar Cookies

Chad and I have been brainstorming cookie ideas for a while.  He really wanted lime and coconut sugar cookies, which sounded very peculiar to me.  But, I searched for inspiration anyway.  I ran across this recipe from Rock Recipes that drew me in.  Chewy and delicious with a sugar coating.  I adapted the recipe to suit our tastes and what came out of the oven is almost indescribable.

First let me say, Chad has confiscated the cookies (apparently he thought being I got the pan of "that must have been good" Captain Morgan's Banana Rum Cake we were even).

Banana Rum Cake with Captain Morgan's Spiced Rum Cream Cheese Frosting

Well, once again I managed to happen upon a fantastic sale.  Banana's this time.  I was shocked to see all the cases of fresh (still mostly green) bananas sitting throughout my grocery store with signs for $.15/lb.  Yes.  Really!  So, I did what I always do.  I took total advantage of the sale and bought a truckload!  So, after making Munchkin's favorite Dried Banana Coins and freezing banana's for Chad's and Munchkin's favorite Banana Orange Smoothie I decided to make something for Mama.  I wanted cake!  Shocking, huh?  Well if you have ever seen my Pinterest board "Cake Cake Cake" or read my allParenting Bio, you may have noticed I am an admitted cake addict.

Chipotle's Copycat Cilantro Lime Rice

We really don't eat out much, but when we do and we have something that we really enjoy, I love to create my own version at home.  Last winter my sister-in-law and her kids came over for a visit while they were in town.  We ended up getting dinner from Chipotle.  The food was really great, but when I tried the Cilantro Lime Rice, I knew there were so many possibilities for this dish. So, I decided to create my own delicious version.  It is truly amazing.
